Einkorn Applesauce Cake

Here’s Why You’ll Just Love This Recipe! This cake on its own is simply amazing, but then you add the nutritional aspect of the Einkorn is simply exciting! Using the Einkorn flour adds so much to an already delicious cake.

Ingredients
  

  • 1/2 Cup Butter
  • 1 Cup Brown Sugar
  • 1/2 Cup Sugar
  • 3 Eggs
  • 2/3 Cup Buttermilk
  • 1 Cup Unsweetened Applesauce
  • 1 tsp Vanilla
  • Cup Einkorn Flour
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 2 tsp Cinnamon
  • ½ tsp Salt
Cream Cheese Icing
  • 1 Block Cream Cheese
  • 1/2 Cup Softened Butter
  • Cup Powdered Sugar
  • 1 tsp Vanilla

Instructions
  1. First, preheat your oven to 350 degrees.
  2. Then grab a bowl and mix all your dry ingredients. Set that aside and then move on to your wet ingredients.
  3. Cream together the butter and sugar.  Once that’s well incorporated, add your eggs. The recipe calls for three, but I only had two at the time so I may do with what I had.
  4. Then you will want to add in your applesauce, vanilla, and buttermilk. Mix well.
  5. After that’s well incorporated add in your dry ingredients. Make sure you don’t over-mix.
  6. Grease a 9x13 dish, and pour your cake batter in. Smooth out evenly in the pan. Then place it in your preheated oven!
  7. While your cake is baking, let’s make the icing! Get your cream cheese, and butter and put them in your mixer. Cream together until nice and silky. Then add in your powdered sugar and vanilla flavoring. Once that’s all mixed, set it aside.
  8. Now it’s time to get your cake out of the oven. Pull it out and let it cool for a good 10 to 20 minutes. Once your cake is cooled, spread it on your cream cheese frosting. I went the extra mile and sprinkled it with a little bit of cinnamon. And there you have it, a corn applesauce cake. I hope you enjoy it!
